1 pound lean ground beef
1/2 cup tomato sauce
1/4 cup onion, chopped fine
1/4 cup parsley, chopped fine
1/4 cup bread crumbs
3/4 teaspoon cumin
1/2 teaspoon paprika
1/4 teaspoon allspice
1/2 teaspoon salt
1/4 teaspoon black pepper
Dash or two of cayenne pepper (optional)
Garnish (optional): 1/4 cup minced onion with 2 tablespoon chopped parsley
1. Combine ingredients well and divide into 6 equal oblong portions about 4 inches long. Place kebabs on a foil lined broiling pan.
2. Bake at 425 for 15 minutes, turn kebabs then bake another 15 to 20 minutes, until a meat thermometer registers 160 degrees.
3. If desired, top with garnish of chopped parsley and onion.
Makes 6 servings
Goes nicely in pita bread or lavash topped with yogurt cucumber sauce. Or served with rice pilaf and a salad.
