1 can chick peas (16-ounce), drained and rinsed
2 tablespoons light mayonnaise
1 small tomato, diced
1 clove garlic, crushed — or 1/8 tsp garlic powder
2 teaspoons lemon juice
1/8 teaspoon cayenne pepper, or to taste
2 teaspoons ground cumin
¼ teaspoon turmeric
2 teaspoons fresh parsley, chopped
1. Place all ingredients bowl and mix well.
2. Serve as a side dish, or as a salad on spinach or your favorite salad greens.
Sandwich Option
This salad can turn into a great sandwich spread.
1. Place all ingredients into a bowl and mix well.
2. If desired, mash to a pulp with a fork to make a uniform spread.
3. Add sliced tomato, onion, or cucumber.
Bread: 4 whole wheat pitas, or 8 slices of whole wheat bread
