1 pound fresh green beans, washed, ends trimmed, and cut in half*
1 tablespoon olive oil
1 small sweet onion, chopped
1/4 cup tomato paste
1/2 cup water
1/8 teaspoon salt
Ground black pepper to taste
- Boil enough water to cover green beans. Add green beans and blanch for 3-4 minutes. Drain well.
- Heat olive oil over medium-high heat and saute onion for 5 minutes, or until lightly browned.
- Add green beans, tomato paste, water, salt and pepper to sauteed onions. Stir well and simmer for 2 minutes, or until green beans are thoroughly heated and desired tenderness.
If all water is evaporated add a little more, but sauce should be thick.
Makes about 5 servings.
*1 pound frozen green beans may be substituted for fresh green beans. Follow package directions for minimum cooking time. Drain well.
